Jammy Heart Biscuits

Ingredients:

  • 175g soft butter
  • 200g caster sugar
  • 400g plain flour
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Plum or raspberry jam
  • Method

    Preheat the oven to 160°C/Gas Mark 3.
    Beat the butter and sugar together until creamy and then beat in the eggs, one at a time. Add the vanilla extract. Sieve the flour and baking powder into the creamed mixture and work together to form a soft dough. Chill for a little while in the fridge, if you have time.

    Roll the dough out on a floured surface to a thicknes of about 1/4 centimetre. Cut into heart shapes. With two heart shapes for each biscuit. (To make the jammy window you will need to cut a smaller heart shape out of one of the biscuits)

    Bake for 15 - 20 mins until golden brown. Remove from the oven and cool.

    When cold stick the two halves together with some sieved jam (to remove pips, skin etc)
